Aromatic Peach
This Co-ferment Peach Process begins with selecting fully ripe cherries, ensuring the right balance of sugars and acidity for fermentation. Over seven days, the beans undergo controlled fermentation with peach infusion, enhancing juicy sweetness and aromatic complexity.
Once fermentation is complete, the beans are meticulously washed to maintain clarity of flavor, then dried in a greenhouse for up to 21 days until they reach a stable moisture content of 11-13%.
