Longer Duration for Roasting

As long as many people said, the roast duration should be between 8-12 minutes. Until we found something unusual, some roaster from Bandung doing a light roast (maybe you know who they are), only for 3 days resting, the flavor is not vegetal at all.

Then we try to figure out with simple logic, when we fry something, the one with shorter period and hotter temp, will make something juicy inside with crispy outside, and another one with lower heat and longer duration, will make the inside cooked well with the same outside.

From this, we start to doing that approach, reduce the charge temp from around 160-180 to only 130-150. With the duration we try to pull for at least 13 mins.

Here is the different from our earlier roast profile with the latest profile we adapt:

The solid one is the roast profile for March 2026, and the dashed one is the latest profile that done on June 2026 and here is the difference (Older vs Current):

  1. Charge temp: 173 vs 98
  2. Duration: 8:43 vs 15:00
  3. Yield: 89% vs 87%

If seen based on the roast level, the current profile will elevate more balance taste while the older profile will more highlighting the fruit acidity from the beans. And the most interesting is the flavor is developed well with minimum resting period (but we still need something to be quantified that makes our perception validated).

How to know the right charge temp?
Know your desire first, silky/gritty, acid/sweet.
